Healthy Spinach/ Artichoke Dip

I debuted a pic of this super easy, super yummy dip last week on insta and was bombarded with questions about the recipe, so I'm excited to finally share it! Because really - everyone should be eating this ALL the time... 

...Or at least at every dinner party! :)


Unfortunately I can't take all the credit, though. I saw the recipe on Into the Gloss and adapted it a little.

Ingredients
1 can of artichoke hearts
1 can of white beans (I used cannelloni)
2 cups of fresh spinach
1/2 cup of UNSWEETENED, UNFLAVORED almond milk (don't get vanilla!!)
Juice of half a lemon
Red pepper chili flakes
Garlic salt
Freshly grated Parmesan cheese

Preheat your oven to 350. Start by draining your beans and tossing them into your blender with the almond milk. Blend until very creamy. Then add in the artichoke hearts and spinach and blend, but keep them a little bit chunkier. Then just stir in the lemon juice, chili flakes and garlic salt. Spoon the mixture into an oven safe serving dish and grate the parm right over the top...


Pop into the oven for 20 minutes. After that, turn your broiler on and broil for 1 minute, or until the parm is all melty and bubbly...


Broilers can be the quickest way to ruin a dish, so be careful! Set a timer, don't go too far, and keep an eye on that dish like your life (dinner party) depended on it!!


Serve while hot, it goes quick!!


I used whole grain pita chips, but it would also be good with veggies if you're being extra good, you little overachiever you!
